The ultimate lazy dinner is a plate of saucy, spicy peanut noodles. This recipe was born out of the need to use up my last serving of fresh noodles while at the same time suffering for an overwhelming case of laziness. The result - a super quick, easy, and delicious noodle dish.
Most of the ingredients are pantry and fridge staples, so its a perfect recipe to have on the rolodex for when you don’t know what to make for dinner. These noodles are delicious as is, but can also be paired with chicken or pork for added protein (and a bit more than a 10 minute cooking time, then).

INGREDIENTS (1 serving)
1 serving fresh Korean noodles
4 tablespoons peanut butter
2 tablespoons soy sauce
3 garlic cloves, grated
1 ½ teaspoons Sriracha sauce
1 teaspoon sesame oil
1 teaspoon sugar
¾ teaspoon rice vinegar
1 cucumber, thinly sliced into half moons (for topping)
Green part of 1 scallion, thinly sliced (for topping)
1 tablespoon crushed peanuts (for topping)
1 tablespoon sesame seeds (for topping)
Kosher salt
METHOD
Measure and prep all of your ingredients to have them handy when the cooking begins
Heat water in a medium pot until it begins to boil. Add a very generous amount of salt to the water and immediately add the noodles. Typically, Korean fresh noodles take 3-4 minutes to cook but check the package instructions
Meanwhile, prepare the sauce. To a medium bowl add the peanut butter, soy sauce, grated garlic, Sriracha sauce, sesame oil, sugar, and rice vinegar. Whisk to combine
Add a ladleful of the starchy noodle water to the sauce and stir again until a silky consistency is formed
Drain and rinse your noodles with cold water. Reserve about a cup of the starchy noodle water
Immediately add the noodles to the bowl with the sauce and stir to combine. If the sauce needs to be loosened up, add a bit more of the starchy noodle water
To serve, top the noodles with fresh cucumber slices, fresh chopped scallions, crushed peanuts, and sesame seeds. Enjoy!
