Few vegetables are as polarizing as the humble Brussels sprouts. I feel like everyone either hates them with a passion or is a dedicated, hard core lover. I’ve never understood the Brussels sprout slander, because when cooked properly these tiny cabbages turn into deliciously crispy and flavorful little bites.
This recipe for Roasted Honey Miso Brussels Sprouts brings them to a whole new level. When they are roasted and glazed with this delectable honey miso sauce, they transform into a flavor-packed dish that even Brussels sprouts haters will love (they have to). This recipe combines the earthiness of Brussels sprouts with the sweet and savory notes of honey and miso, making for a perfect side dish for any occasion.
INGREDIENTS
Serves 2-3 as a side dish
400g Brussels sprouts
3 tbsp (45g) butter
55g miso paste
½ tbsp (10.6g) honey
½ tbsp (8g) soy sauce
1 tsp (5g) mirin
½ cup (118ml) water
Avocado oil
METHOD
Cut the Brussels sprouts into equal size pieces. Cut the large ones into quarters, and the medium/small ones into halves. Wash them thoroughly with water and dry with a paper towel
Heat up the oil in a cast iron pan. When oil is hot, place Brussels sprouts facing down. Cook the Brussels sprouts until they get a nice char throughout (be careful not to burn them!)
Meanwhile, add miso paste, butter, soy sauce, honey, and mirin in a bowl. Mix well to combine
When Brussels sprouts are charred, add miso honey mixture. Make sure to coat all of the Brussels sprouts in the mixture. Stir them around to make sure they are all coated. Then, add water to the pan to deglaze and create a saucy consistency
Place cast iron in the oven at 400F (204C) for 5-7 minutes
Serve and enjoy! This portion makes sides for about 2-3 people. Adjust portions accordingly if cooking for more
